Savoury cake day...potato and fish (but not together)

It's been a busy day and it's still only half past 1.  The hens were out on the way to school this morning (the park keepers hens).
Such a lovely sunny day and we needed to take the library books back,this is how we roll...J likes to call me Miss Marple in this guise!
So, back home and what's for dinner? No bread...leftover mash in the fridge from last night though. Old Hannahs Potato cakes it is then.  This recipe is from an old book passed on from my mum - she used this book when we were little.
You will need:
The recipe in the book is 8oz SR Flour, 1/2 tsp salt, 2oz butter/marg, 8oz mash, 1 egg.

I had 180g of mash which equated to just over 6oz so added the same flour and reduced the butter to 1 and half oz.

Place flour and salt in a bowl and rub in the butter.

Rub or fork in the potatoes.

Make a well in the centre of the bowl and drop in your egg.
Fork egg into mixture using a little milk if necessary (I didn't) to give a soft pliable dough. Finish by kneading until the dough is smooth. Place on a floured board and roll out to 1/2 inch thickness. 
Cut into rounds about 2-3 inches in diameter. You can use a glass if you don't have a cutter.  I am a sucker for hearts though...
Space out on a baking sheet and bake for 30 mins at Gas 5. (mine were cooked at 180oC for about 25 mins, but they weren't 1/2 inch thick either).
Take out of the oven and wrap in a tea towel to keep them soft and warm.  Eat while hot.
Ideal for freezing uncooked. Left over cooked ones can be reheated but have a crispy surface...Ta Dah!
We still haven't bought any more jam so we made some houmous.  Lunch for 2...
Quite healthy...except all the boy ate were the crisps and I had to put chocolate spread on the potato cakes for him to touch them! Hey ho, I'm a tryer.

Right what's next, put some washing out, don't you love whites on the washing line? and yes I made the peg bag, you will see this material popping up everywhere!
I took a photo of the stepping stone path to show you, it looks better in real life though (and the kids have been faffing about with it I think).
Ok, back in the kitchen...what's for tea? I need to go shopping so it's down to what's in the store cupboard...it's a nice salad day so I think some simple fishcakes would be nice.

You will need:
5 cream crackers, 
Small can of sweetcorn, 
Small onion, 
3 tbsp mayonnaise, 
Juice of 1/4 lemon, 
Handful of peas (defrosted by pouring boiling water over them), 
Can of tuna (drained)

Break crackers into whizzer (food processor), tip in the sweetcorn and blitz to a loose paste. Add your onion and pulse so it's chopped.
Transfer to a bowl and add everything else, gently stir until all bound together. Loving the colours of spring going on here...

Shape the mixture into cakes (mine made 7 smallish ones) and fry in a tablespoon of oil (4 at a time).
I will be testing out my new coconut oil for frying these little beauties later, more on the wonders of coconut oil another day. Back to school for the little lady now, ttfn Nx
