Chop smallish so it cooks quicker and add to your chosen pan. J came back from Ikea (yes he went to Ikea without being dragged there!!) with these fab chopping boards that are bendy. They remind me of my cutting mat I use for material (without the squashy backing) - cool...
Oh yeah, add some onion (I'm always forgetting my onions aren't I) found lurking in the fridge. Instead of oil to fry these off, I'm using coconut oil - it's wonderful and needs a whole post dedicating to it - so not today...
Fry until onions are soft then add some vegetable stock, cook until soft enough to whizz, add half a can of coconut milk and whizz until smooth, see steamy picture below...
Add a little chopped coriander and I topped it up with boiling water to make it less thick. Here you have your leftovers soup and it was scrummy (very sweet), we had toasted croutons with ours and do you know what? He ate it all...woohoo result :-)
After school we went to catch up with friends and had a picnic in the park...
All the kids ran wild and the 2 girls were picking flowers, my girl brought hers home with her and while I was unpacking picnic boxes etc she made a lovely flower arrangement on our table, enhanced with fruit from the fruit bowl...another lovely sunny day. Nx
